It took me years to master my oven at home.
First you have to understand that every oven will behave differently, some will heat quicker than others, some the dome will heat quicker than the floor and others will have hot spots that can make cooking tricky.
Six simple steps to sumptuouswood fire cooking Only ever light your fire on one side of the oven and allow the heat of the flame to heat the floor and the dome.
Some say to light the fire in the centre and then shift the fire to the side when ready to cook.
This will cause hot spots on the floor making cooking difficult.
Build the biggest fire you can safely and allow it to burn until it leaves a bed of coals, then use the longest wood your oven will accommodate.
This will give you an even flame across the oven.
Remember the heat in the floor and the dome are for cooking and the flame is for browning.
You don t need a huge flame whereas you do need good heat in the floor and the dome to cook the pizzas.
Our pizzas have a unique contemporary style of their own - cooked in a traditional wood fire oven using the freshest ingredients prepared daily.

This ensures they cook in the short time it takes to cook the pizza in a wood fire oven.
Use minimal yeast in your dough and try using ice water when preparing your batch which will retard the yeast.
The yeast will then activate in the oven giving you an authentic light, thin and hollow puffy crust Learn the art of the Pizza Shuffle this is moving your pizza around the oven floor which will cook the pizza evenly and if you do have a hot spot you will have the top cooked at the same time the base is cooked -Jason from the Pizzeria on Norman NOTE FROM THE EDITOR Many apologies to JJ the Pizza Man for messing up his editorial last edition.
